Chocolate Cornstarch Pudding

A delicious and easy to prepare chocolate pudding.  From “The Best of Amish Cooking” by Phyllis Pellman Good.

Cook Time: 30 minutes
Servings:  4


  • 3 Tbsp. cornstarch
  • ½ cup sugar
  • ½ tsp salt
  • 3 Tbsp. cocoa
  • 2 cups milk
  • 1 tsp. vanilla


  • Mix dry ingredients well.  In a saucepan heat 1 ½ cups milk.  Add other ½ cup of milk to the dry ingredients and stir until smooth.
  • When the milk is hot, but before a skim forms, stir in the dampened dry ingredients.  Stir constantly over heat until the mixture thickens and comes to a gentle boil. (It should not boil vigorously.)
  • Remove from heat and add vanilla.  Serve either warm or cold.
